 BANGA STEW




 How to make Banga stew (Palm oil stew)

Ingredients use in making Banga stew. Palm fruits, dry fish or stock fish, kpomo(Animal skin) you can use chicken or beef any one you prefer, banga spice, Maggi, pepper, crayfish, salt, scent leaf ,pumpkin leaf.

Method of preparation: 

                  In a clean pot. Add water then leave to boil, add your palm fruit to the pot cover and leave to cook for 30-40 minutes. Remove and transfer to a sieve. Get your mortar pour in your palm fruit into the mortar pound for 5 minutes.

                   Boil water in a pot then transfer the hot water into the mortar(that contains the pounded palm fruit) mix very well. Using a sieve separate the palm fruit extract from the banga mixture(the sauce from the palm fruit) instead of going through all this process you can as well get packaged banga sauce from any supermarket. transfer the banga sauce to a clean pot. Cook for 50 minutes close to an hour. In another pot cook your meat,stockfish and kpomo (animal skin). Spices to add to your stock are maggi, salt and Banga spice. Cook for 10 minutes then transfer to the pot of banga sauce. 

                 Then add your spices(pepper, crayfish, Maggi ,salt, banga spice) then cover to cook for 3 minutes. Then add your chopped vegetables. Then cook for 5 minutes. Then bring down your pot. You can have Banga Stew with White rice.
