#Coconutcookies

 HOW TO MAKE COCONUT COOKIES #COOKIE RECIPE. 









To Make this we will be needing, 

1&1/2 Cup of Flour 
100g of Butter
1/2 teaspoon of Salt 
1/2 table spoon of Baking Powder 
1 cup of Desiccated coconut 
1/3 cup of coconut milk

Method of Preparation:

In a bowl add 1 cup of icing sugar and 100g of Butter(melted) Then mix.
Get a sieve,








             Add your flour, Baking powder and salt, then sieve into the bowl, Mix with a Spatula, then add your desiccated coconut about 1/2 cup and also add your 1/3 cup of coconut milk. Mix together until a smooth dough is formed. Cut out a small dough, Roll and press with hand to form a flat dough then coat with the desiccated coconut. 
           Repeat the process for the rest of the dough. Then Bake in a pre heated oven for 30 minutes.

HOW TO MAKE FISH PIE. FISH PIE RECIPE.


INGREDIENTS USED: 

  • 1&1/2 CUP OF FLOUR 
  • 100G OF BUTTER 
  • 1/2 TEASPOON OF SALT 
  • 1 MEDIUM SIZE ONIONS 
  • 1/2 TEASPOON OF MAGGI SPICE
  • 1/2 TABLESPOON OF BAKIMG POWDER
  • 3 PIECE OF COOKED FISH
  • 1 EGG(FOR THE EGG WASH)









Method of Preparation: 

    In a bowl Add your Flour, Baking powder and Salt, Then mix and Add your butter to the dry ingredients. Mix till it turns Crumbly then Add about 1/3 cup of Warm water mix till a smooth dough is formed. Cover with a cling film, then set aside. 

     Get the cooked fish and remove the bone then mash with the help of a kitchen fork or knife. set Aside.

     In a clean pot add your vegetable oil and your chopped onions, Stir for 2 minutes then add your salt and seasoning cube,




then add the mashed fish, fry for 2 minutes then add about 1/3 cup of 

water to the pot. Then cover to cook until the water dries up, then the filling is ready, then leave to cool.

      Sprinkle some flour on your work surface, transfer the dough to your work surface, get a knife to divide the dough into equal sizes. Roll each of the dough to about 1cm thick. The dough should not be too flat. then get a pizza cutter, cut into a square shape. then Brush up the edges with the egg wash. then add your fish filling to the rolled dough, then roll up with hand to cover up. Repeat the process for the rest of the dough. After rolling up all the fish pie use a fork to create a small hole on the fish pie, Then use the egg wash to brush up the top of the rolled fish pie, then add the fish pie to an already pre heated oven. Then bake for 30 minutes.

Peanut #Peanutrecipe #Coatedpeanuts

 HOW TO MAKE TASTY COATED PEANUTS 





INGREDIENTS USED:

1/2 Cup of Raw Groundnut 
1 large egg ( you can use water for those that don't like egg)
1 Cup of Flour 
2 Tbs of Sugar 
1/2 Teaspoon of Salt
2 Cap full of liquid milk flavour (optional)
1/2 Tbs of Baking Powder 
2 Tbs of Powdered milk
1/2 Bottle of Vegetable Oil( For frying)

Method of Preparation:

       Add about 1/2 cup of warm water to the raw peanuts then add salt to it, Mix, then transfer to a sieve. Pour the peanuts into a flat plate, then leave it to dry for 20 minutes.  In a bowl add your Flour, powdered milk, Baking powder and salt then mix. In another bowl add your egg, sugar, and liquid milk flavor then mix and set aside.
          It is time to start coating our peanuts. To coat the Peanuts, what you need to do is that you get your dried raw peanuts pour into a bowl. Add a little from the egg mixture and a little from the flour mixture. 






N.B: you should mix it in a circular form( reason: this is to achieve a uniform coating) 
You should repeat this procedure for the rest of the mixtures. remember to separate the ones that clustered together. after coating get a sieve and remove the excess flour particles. Add about 1/2 bottle of vegetable oil to a frying pan. Then leave to heat up for 2 minutes. then pour in the coated peanuts into the pan and please be careful not to overcrowd the pan, Fry for 3 minutes under low then flip the peanuts with your frying spoon, Fry for another 4 minutes, once it turns golden brown. Remove from heat. Repeat the process for the rest of the peanuts.

Egg Omelette

 How to make Egg and Vegetable Omelette.

Ingredients used: 

4 eggs

10 pieces of green beans(chopped)

2 Green pepper(chopped)

2 medium size Fresh pepper 

1 seasoning cube

1/2 tablespoon of Curry powder

1/2 tablespoon of salt 

1/2 tablespoon of thyme

1 medium size onions (chopped)

3 tablespoon of vegetable oil

3 fresh tomatoes.


 


Method of Preparation;

            Cook the green beans for 20 minutes transfer to a sieve. Add about 2 table spoon of vegetable oil in a clean frying pan. Then add the chopper onions fry for 3 minutes then add the fresh tomatoes fry for about 5 minutes under low heat. Then add the cooked green beans, and the green pepper stir for 5 minutes then add your spices(salt, curry, thyme and seasoning cube).

           Add little water about 3/4 cup then Stir and leave to cook for 7 minutes. After 7 minutes remove from heat then allow to cool. In a clean bowl add the 4 eggs, Beat for 2 minutes then pour in the mixture into the egg. Add 1 tablespoon of oil into a pan Then transfer the mixture into the frying pan. 




           Cook for 5 minutes then get a plate place on the frying pan then flip it to get cooked properly on the other side. Cook for another 5 minutes. Then remove. Plantain Pancake

INGREDIENTS USED:

Dry Ingredients:

2 Cups of Flour

2 Tbs of Milk

1 Tbs of Baking Powder

1/2 Teaspoon of Salt 

1 Tbs of Sugar

Wet Ingredients:

5 Mashed Plantain

2 Medium Size Fresh Pepper(optional)

1 Small onions(optional)


Method of Preparation:

     In a Bowl add the Mashed Plantain then the chopped pepper and onions and 1 cap full of Vanilla essence. Mix together. Keep Aside. In another Bowl add the Dry ingredients then Mix. Pour the Dry ingredient into the mashed plantain mixture. Mix then Add water gradually till a Normal consistency is formed. 






     In a Deep Frying pan add 1/2 liter of Vegetable Oil to the Pan. wait for 3 minutes for the oil to be hot(not to hot tho) then scoop your batter little by little into the pan, Avoid Overcrowding the Pan, So that Everything fries Properly. 

     Fry for 3 minutes under medium heat, then flip and Fry for another 3 minutes before removing from heat. Repeat the Process for the rest of the Batter. Plantain Pancake is best served with tea or pap.

Vanilla and Strawberry Pancake

INGREDIENTS USED: 
2 EGGS 
2 TBS OF GRANULATED SUGAR
200ML MILK 
1 CUP OF FLOUR 
1 TBS OF BAKING POWDER 
2 TBS OF VANILLA FLAVOUR 
1/2 TBS OF RED FOOD COLOUR 
1 TBS OF MIXED FRUIT 
2 TBS OF GROUNDNUT OIL
1/2 TEASPOON OF SALT

METHOD OF PREPARATION:

          Add the egg and sugar mix together then add your liquid milk,mixed fruit and vanilla flavor pour your mixed dry ingredients which are your flour, baking powder and salt into the egg mixture then mix everything together. separate the batter into 2 then add the red food color into one, then mix.

Bambara nut meal(Okpa)

 HOW TO PREPARE OKPA(GROUNDED BAMBARA NUT)



Ingredients used: 
1 liter of Grounded Bambara Nut
3 big spoon of Red oil
2 tbs of salt
7 pieces of Bitter leaf 
6 fresh pepper 
5 cups of hot water 

METHOD OF PREPARATION:

Pound the fresh pepper with your mortar and pistel then add your hot water. Then the grounded bambara nut mix till you get a thick consistency then add your red oil. Then add the hot water gradually until a not too thick or watery consistency is formed. Then get your white nylon bag(up to 7)add the bitter leaf and your mixture. Tie and keep. Add about 2 liters of water a clean pot. Then wait till it boils before adding your Okpa (grounded bambara nut). 
           Cook for 45 minutes. To check if it is well cooked. Get a clean broom stick. Put it inside the Okpa, if it comes out stained then is not yet done .But if it comes out neat you know is well cooked. Okpa is best served hot and it goes


well with Pap or Coke. 

Banga Stew

 How to make Banga stew (Palm oil stew)

Ingredients use in making Banga stew. Palm fruits, dry fish or stock fish, kpomo(Animal skin) you can use chicken or beef any one you prefer, banga spice, Maggi, pepper, crayfish, salt, scent leaf ,pumpkin leaf.

Method of preparation: 

                  In a clean pot. Add water then leave to boil, add your palm fruit to the pot cover and leave to cook for 30-40 minutes. Remove and transfer to a sieve. Get your mortar pour in your palm fruit into the mortar pound for 5 minutes.

                   Boil water in a pot then transfer the hot water into the mortar(that contains the pounded palm fruit) mix very well. Using a sieve separate the palm fruit extract from the banga mixture(the sauce from the palm fruit) instead of going through all this process you can as well get packaged banga sauce from any supermarket. transfer the banga sauce to a clean pot. Cook for 50 minutes close to an hour. In another pot cook your meat,stockfish and kpomo (animal skin). Spices to add to your stock are maggi, salt and Banga spice. Cook for 10 minutes then transfer to the pot of banga sauce. 

                 Then add your spices(pepper, crayfish, Maggi ,salt, banga spice) then cover to cook for 3 minutes. Then add your chopped vegetables. Then cook for 5 minutes. Then bring down your pot. You can have Banga Stew with White rice.

How to make African salad the ingredients used to make African Salad (Abacha)

You will be needing your 
Raw Abacha
Dry pepper 
Salt
Crayfish
Ukpaka
Ehuru
Onions 


Method of preparation:

      You first of all get your raw Abacha soak it in water for 10 minutes then you bring it out and put it in a sieve and leave it. then you bring a pot add your dry pepper your crayfish and your Ehuru then fry for about 5 minutes. okay after Frying for 5 minutes you bring it out from the pot. then transfer to a mortar. pound it well till it is well pounded. then in a pot add your oil your onions and your Maggi stir for like 2 minutes. 




           Then bring it down and transfer to your mortar. turn both the oil sauce and the grinded Ehuru, dry pepper and crayfish. then mix everything together. then after you add your Abacha add bit by bit so you can get everything and make sure you turn it very well then your salt add your salt bit by bit because if you add too much salt it will not be too nice and you may hate the taste. then for your toppings that's what you want to be on top of the Abacha you can fry your cooked ice fish you can get garden egg if you want. some people use the leaf is optional though. then for the oil sauce you can pound Crayfish and Pepper if you want,
